How do you get a model to have that flat, unshiny look? Also, any good ways to get a slightly weathered appearance?

Use a flat clear coat such as testors dullcote, Mr Hobby super clear flat, or the tamiya equivalent. I personally use krylon flat clear which isn’t very good for anything that’s not painted already.
There are many many ways to get a weathered appearance (none of which I’ve actually used so don’t listen to me). Dry-brushing, over using gundam realtouch/brush type markers or using a dremel tool are some basic techniques people use for weathering.
Thanks. But do you just spray it straight on the pieces on the runners before assembly?
Depends if you are painting it or not, or using gundam markers. Can always use washes, or the various weathering sets that are available, to put weathering on the kit.
