Depends on what the paint is, tamiya comes in many kinds, acrylic enamel and lacquer, I use acrylic which works with water…but advised to use acrylic thinner (I got it mixed up, there is water based acrylics but I don’t think this tamiya is :S)

Not sure about the gaia paints, once you find out what they are you can use the appropriate thinner (acrylic thinner, water if water based acrylic, enamel thinner and lacquer thinner, brand doesn’t matter)

can’t recommend a brand really, that’s sort of a preference thing and whether or not they have the color you want, and well sometimes it’s just about whatever you can get your hands on. As for colors well “Red Madder” if your kit has red on it especially if it’s a Gundam suit then it’s probably that. Other than that Bandai seems to like “navy blue” “neutral grey” and ofcourse white, though none of them are used pure, they’re part of mixes a lot though. That’s if you’re gonna go by the paint guide. That said going simple is always a good choce, so lets say you’re doing the original Gundam, the RX-78-2, that’s a good place to start since most other gundams have colors based off of that one, you’ll need a yellow, a red, a blue, a white, and a black/grey, and if you’re doing the 3.0 or rg you’ll need 2 shades of each of those except the yellow, so what do you use, well the “red madder” is still a good choice, for the blue you can use cobalt blue as a decent choice, and the white and yellow paints are themselves good choices, then neutral grey for the joints and hands and backpack and so on. but well maybe you want a bit of metallic in your mix, so changing out the yellow for gold is a good choice, then well if you feel like it you can change out the rest of the colors for metallic versions, and replace the white with silver.
